I made this cocktail because after buying coconut cream to make Pina Coladas for an upcoming post I had a lot of Coco Lopez left. The Coconut Fizz turned out to be a drink that I really enjoyed and would gladly make again. All you’ll need is some lime juice, coconut cream, club soda and white rum. I would pick a white rum with some character and for this drink I opted for Matusalem rum. Matusalem is a rum house that operates out of the Dominican Republic and does a great job of making rum the same way that they’re produced in Cuba. A bottle of their plantino rum (white) only costs about $15.
The Coconut Fizz
2 oz light rum
1/2 oz coconut cream
1/2 oz fresh lime juice
club soda
lime wedge
Shake the first three ingredients with ice and strain into an ice filled tall glass. Top with club soda and garnish with a lime wedge.
