I’m absolutely planning on doing a “simply the best” post on New York’s top dishes and including my top ten instead of just five. It’s going to be very hard to leave this seasonal sandwich off of that list.
The reason that the sandwich is only offered seasonally is because Tom Colicchio, owner of the Craft empire, refuses to make a BLT without the best tomatoes available. When heirloom tomatoes are in season, BLT’s are available at ‘wichcraft. When the heirloom tomatoes are no longer available, the sandwiches sadly follow suit.
And quite a BLT that it is, aside from the heirloom tomatoes the sandwich is made with bacon that has the perfect BLT consistency, not too crisp and not too chewy, wonderful toasted white bread and a mayonnaise that manages to find its consistency somewhere between traditional mayo and the dressing the condiment is supposed to be. This BLT is a phenomenally made and balanced sandwich and you are doing yourself quite a disservice by not giving one a try when available.
